Yield: 4 servings

  • 3 pounds chicken on the bone, mix of thighs and legs

  • 1 onion, sliced thinly

  • 9 cloves garlic, minced

  • 1/3 cup lemon juice

  • 1 1/2 tablespoon olive oil

  • Italian seasoning, or mix of basil, oregano and sage

Step 1 : Preheat oven to 375.

Step 2 : Prepare the pan

Place onions and garlic in a baking pan. Cover with lemon. Cover with chicken.

Step 3 : Season

Pour oil over chicken. Cover with seasonings and black pepper.

Step 4 : Bake

Cover with foil and bake 1 hour. Remove foil and bake 20 minutes until cooked.

Step 5 : Accompaniments

Good with roasted vegetables, baked sweet or white potatoes, and/or spaghetti squash.
