Yield: 3 - 4 servings

  • 2 tomatoes, diced

  • 1 shallot, peeled and thinly sliced

  • 3 cloves garlic, minced

  • 1 lemon, juiced

  • 1/4 cup feta cheese, crumbled

  • 1 1/2 to 2 pounds cod or other white fish

  • Paprika

  • Dried basil

  • Black pepper

  • 2 tablespoons capers

Step 1 : Preheat oven to 425 degrees.

Step 2 : Prepare vegetables

Place chopped tomatoes, shallot, feta cheese, garlic and lemon juice in a baking pan large enough to hold the fish. Drizzle 1 tablespoon olive oil on the vegetables. Add black pepper and stir.

Step 3 : Prepare Fish

Pat dry the fish with a paper towel. Sprinkle paprika and black pepper on one side. Place the fish on the tomatoes, seasoning side down.  Drizzle 1 tablespoon of olive oil on the fish. Sprinkle with paprika, dried basil and black pepper. Add capers to the pan.

Step 4 : Bake

Bake 20 to 25 minutes until the fish flakes easily. Plate the fish and top with tomatoes.
